This Week's Recipes ...

Here's what we plan on eating this week :: 

Monday :: Salmon; Spaghetti Squash with Pesto 
Tuesday :: Steak Salad with Crispy Shallots
Wednesday :: Rotissere Chicken; Shoestring Sweet Potatoes
Thursday :: Pork Roast with Carmelized Parsnips 
Friday :: Date Night

We had such a great weekend ... Saturday we took some of the residents to a car show.  I wasn't really looking forward to it, because it was eating into my Saturday, but we had a wonderful time!  I am so glad that we went!  

Then yesterday, we worked outside and spent some time repairing our screened porch.  We have really been loving using it, but it needs some work.  While we were outside a neighbor came over ... We let him tour the house and talked about some projects when had going on.  We explained that we weren't looking forward to installing the ceiling fan ... He did it for us!  We are so thankful!

This Week's Recipes

Happy Tuesday ... Sorry, I have been MIA.  Last week was spring break here, so I volunteered all week because the director was on vacation.  It felt like work.  I didn't love being there all week, but that's behind us!  

Here's what we are eating this week :: 

Monday :: Chorizo and Ground Beef Stuffed Peppers  {I didn't use turkey, I used a mix of ground beef and chorizo} 
Tuesday :: BBQ Stuffed Sweet Potatoes; Spinach and Over Easy Eggs
Wednesday :: Salmon; Mashed Parsnips 
Thursday :: Steak Salad with Crispy Shallots
Friday :: Date Night 

We are still going pretty strong on our diet ... We eat about 90% Paleo.  We do cheat on the weekend, but without SO much dairy/cream/cheese.

I came across this on a friends Instagram and it really struck a chord with me.  I feel like since we've moved I have had a laundry list of WANTS.  I know that this is unhealthy, but I also realize that it's very normal.  I am struggling with what is a healthy amount of wants vs. what is an unhealthy amount.  

Does anyone else struggle with these thoughts?  How do you find a healthy balance?

This Week's Recipes

Happy Monday!  I hope y'all had a great weekend.  We were really productive doing house projects ... I can't believe how much we've been able to knock out with the weather being cooperative.  It's nice to actually be able to work outside and not be lazy in the house ... Which has been our winter norm!  

We are entering week four of Paleo ... We have cheated, but tried to keep the cheating to a minimum {one meal on the weekend and a few beers during basketball}.  But, we are both really liking what we've eaten and the way we feel.  Here's what is on the meal this week :: 

Monday::      Steak; Brussell Sprouts; Sweet Potato
Tuesday::       Tomato and Artichocke Chicken 
Wednesday:: Spaghetti Pie
Thursday::    Zucchini Fettuccine with Rosemary Butternut Cream Sauce

Weekend Project

We have been having beautiful, spring like weather ... It's hard not to get excited about life outdoors, grilling out and beautiful flower beds.  But, I think the spring weather is short lived ... Snow and cold are in our forecast for next week and I am so disappointed.  

We are not going to be working in the flower beds this weekend or planting anything ... But, hopefully working on our deck.  The screens need to be replaced and I am hoping to create some kind of screen under the deck.  When we first moved in, the underneath of the deck was hidden with plastic lattice.  I don't really like the look of traditional lattice, so we knew that was something we would want to change.

Windows Windows Windows

We have had two warm days and it has me itching to get outside and play in the yard!  But, today is cold and it's supposed to be cold for the next few days ...  Seriously, I am ready for spring.  I ordered a few new things for my yard and I am hoping to start working on it next week.  

We are hoping to rent a power washer this weekend and clean our deck.  Then, next week I will start painting it!  

I know that our outdoor space will be a process, but I am thrilled to get started on it.  We have a screened in porch {that needs some love} and I am so excited to use it for the next eight months!

What We've Been Eating ...

I haven't been posting my weekly recipes, because Patrick and I are trying to "clean up" the way we eat.  We haven't been eating any enchiladas or fancy sauces, but we both feel better and we both know we've been eating better!  It is amazing the crap we put into our bodies on a daily basis, but we are really trying hard to change our eating lives.  

We are following The Whole 30 Program , which is incorporating Paleo and Gluten-Free into our lives ... No gluten, no beans, no dairy {among other things}.  We are eating a lot of baked chicken with two veggie or stir fry ... I am not going to lie, the first week was pretty boring, but this week, I feel like we've gotten the hang of it.  Meal planning was easier.  Shopping was easier.  And so far, the food tastes better!  

Needless to say, there are not too many recipes to share, but these three are big hits!
