We are having some of our favorites this week ... I think we will have a date night on Friday, because Saturday we have a wedding.  I had a pretty unproductive weekend; Patrick was at a bachelor party.  He needed a wild weekend, so I think it came at the perfect time!

Day Dreaming

I am ready for a beach vacation.  Our next trip is to New Orleans and while I am so excited, I keep thinking about how wonderful the beach is this time of year.  Maybe we can drive down for a long weekend in June.  I just  LOVE the beach.  I can't think of anything much better then sitting in my chair, feet in the water and a cocktail in my hand.  LOVE.  

Off to pretend.

This Week's Recipes

We have a lot going on this week ... My sister's birthday.  A late Mother's Day celebration with my mother in law.  Patrick's going to a Bachelor Party.  I am not sure if I will really stick with this meal plan, but it's worth a shot.

Fun Fabric Friday

I have been in love with this Schumacher fabric for a long time, but struggling with how to use it in a room.  I love the wallpaper, but Patrick is scared of it.  We both LOVE the living room space.  I love roman shades any way and with this white trim and wall color, I think it is the perfect room!

Monthly Review






April sped by.  I don't know that I really got into a routine and then the month was over.  I didn't meet my goals for April, but to be honest, I didn't even attempt to run a mile.  I have CK52 app on my phone ... I am really going to try to run.  May is my month!!!   

Here are the highlights: 
  • Cook five nights a week ... April was tough for cooking.  My sisters were in the Main Street Festival and I tried to help as much as my scheduled allowed.  I struggled the week of the event, but the first three weeks of the month I did incredible!    
  • Exercise five times a week for 40 minutes ... Again, I did good three of the four weeks out of the month.  I am going to work really hard at getting back on track.  Y five days a week for 40 minutes.  Walk 2 nights a week.  Jillian Michaels three days a week.  And 31 day ab challenge, that I am starting on Monday.    
  • Pay off small debts ... I had a productive "work" April.  We had more coming in than normally and it was nice to knock out a few things.  We are so close to be able to say we are debt free {minus a mortgage and student loan}
  • Lose weight ... I lost 2 lbs. in April.  I hate that, that is it, but I got some positive feedback and that always helps.  I need to be a little more serious about actually eating breakfast and lunch AND focus on my intake during the weekends.
  • Save, save, save ... We were able to save a little and pay down a little.  It always makes me feel productive and like we are moving in the right direction.

Favorites

We've eaten a lot of good food lately and I thought I would share the recipes that have solicited reviews from Patrick!  Not that he is picky, but he doesn't always tell me what he likes and what he hates.  So, anything he likes, I keep in the rotation.

This Week's Recipes

We've eaten a lot of good food lately ... I will go through these recipes and pick what have been our favorites!  I can't believe it's May ... Where has the time gone?  

While I have been pretty consistent with most of my goals for the year, I've done best preparing meals and planning out what we are actually going to eat. It's been easier going to the store, I know I've saved money and I feel like I am doing my wifely duty!

Tuesday 
Stuffed Peppers  - I am not sure if we will have a side or not.  With some meals I struggle with side dishes.  I don't think Patrick cares.

Left Overs for Patrick - I have plans 
Thursday 
Pesto Ranch Chicken - Couscous - Caesar Salad - I am not using thighs, I'll use chicken breast
Friday 
Spicy Thai Noodles with Steak
