August Book Club

Sophie Kinsella is a fun, lighted author ... You aren't going to fill any smarter, after reading this book, but if are looking for a quick and fun read, this is it!  I love girlie books in the summer and Kinsella never disappoints in that category. I liked this book; the story was really sweet.  If you are looking for a fun, pool read, this book will not disappoint.  

I loved The Husband's Secret, so I thought I would give this one a try.  I liked this one even better!  It was a great story and while the "interviews" were a little confusing at first, once I realized that they were interviews I really got it.  I loved the story and love the way Moriarty writes, following several different characters.  I have What Alice Forgot on hold at the library and I can't wait to read it!  

This book was definitely a favorite.  Dysfunctional family.  Death.  Love.  I loved this book and when I finished, I realized it is being made into a movie.  Coming out in just a few weeks.  I can't wait.  The story was fun, yet complicated and I didn't want the book to end.  Check out the trailer on YouTube.  We don't get these kinds of movies in Paducah, but I told Patrick we would drive to see it!  

I just finished The Happiness Project and while it wasn't a fun, quick read, it was an interesting idea.  The author picks four to five things a month to focus on, that she believes will increase her happiness.  I feel like I am generally a happy person, but what a wonderful way to enjoy life more.  I took several ideas from this book that I am trying to incorporate in my own life.  I love the idea of this book and hope that I can remember it.

This Week's Recipes ...

Tuesday {D} Skillet Vegetables on Cheese Toast - Caesar Salad

I can't believe it's already Monday!  I am having a hard time, waking up and getting moving this morning!  I've planned our meals and made our shopping list, but I am just not ready to get going!  

We had a great weekend.  Friday night was a wonderful date night.  Saturday we had dear friends come to visit ... We ate lunch, explored town, had a yummy dinner, drank some beer and then they left Sunday morning.  Sunday we went to church ... We hadn't been consistently in a while and felt like we were MEANT to be there this week.  We messed around and took one of Patrick's residents too the movie {with two of his staff members}.  It was such a fun weekend!

I made two incredible recipes this weekend and have to share!

I had a hard time coming up with recipes this week.  Our house gets so hot when I cook, but I couldn't get excited about crockpot or skillet meals this week ... And Patrick has a meeting, so grilling is out, too.  Oh well.  I think it's actually supposed to be pleasant, so maybe using the oven won't kill me.  

We had a great weekend ... It was my baby sister, Betsy's first wedding shower in Franklin.  My mom's friend threw her a great party and it was really a special evening.  Our family is so blessed with good family friends and great neighbors, it makes it fun to celebrate life with them.  

I started reading another book last night, when I got home and I couldn't stop.  I finished it today, but more on that later!

Three Down. Three to Go.

A Rule Against Murder took me a while to really get into and enjoy the story.  But, once I warmed up to the writer's way of writing, I really enjoyed it.  It was suspenseful and I wanted more once it was over.  {I love when that happens}.  This wasn't my typical "quick" read, but it was great!

Years ago, I started reading Hiaasen's books.  I love his way of writing and I imagine that he is a dirty hippy, that thinks everything is ruining Florida {land development, tourists, crime}.  His books always some how tie in the demise of Florida and it's funny!  This book was quick and has a ton of personality.  I loved it.  

I had to throw a girlie book in there!  I love Jennifer Weiner and have read all of her books.  Usually the books are a little more relational, than this one was, it was good, but has more substance than her norm.  I think because I was expecting something different, it took me a while to realize that I really liked this book.  

I have three more to go before my next trip to the library.  I am enjoying reading and most evenings pick a book, rather that watching TV.  I'll share more when I am finished!

Try This Now ...

We had this for dinner tonight and it was so good!  We both loved it, please check out this girl's blog and make this for a meal, soon!!! 

Spicy Chicken, Spinach & Tomato Stuffed Avocado with a Sriracha-Greek Yogurt Sauce
For 2 servings

-1 large, ripe avocado
-2 cups cooked, shredded white meat chicken
-1 cup spinach, finely chopped
-10-12 grape or cherry tomatoes, quartered
-1/4 cup plain greek yogurt and 2 tbsp plain greek yogurt, split
-1 egg
-1/4 tsp garlic powder
-1/4 tsp salt
-1/4 tsp pepper
-1/8 tsp cayenne pepper
-1/4 tsp chile powder, plus more for sprinkling on top
-1 tbsp sriracha
-1 tbsp almond milk (or coconut milk or regular milk)

-Preheat oven to 375.
-Cut the avocado in half, carefully removing the pit. Scoop out the middle of each avocado half, leaving about 1/2 an inch of avocado in the skin. Add the scooped out avocado to a large bowl.
-To the bowl with the avocado, add the chicken, spinach, tomatoes, 1/4 cup greek yogurt, egg, and spices. Mix very well until all combined.
-Scoop as much mixture as you can fit onto each avocado half. Sprinkle with extra chile powder if desired.
-Place stuffed avocados on a foil-lined baking sheet and bake for 10-12 minutes, or until warm.
-Meanwhile, prepare sauce: whisk together 2 tbsp of greek yogurt with 1 tbsp sriracha. Whisk in about 1 tbsp of almond milk, or until desired consistency is reached.
-When avocados are done, drizzle with sriracha-yogurt sauce and serve immediately.

July Book Club

Here's what I read in July ...  I loved all five books and all had good stories, but I really loved Me Before You.  So good!  Actually, I loved them all.  The Heart Mender, wasn't well written, but the story was very sweet.  I thought The Husband's Secret was going to be predictable, but then it wasn't.  And Emily Giffin is always a fun and quick read.  

I joined my public library two weeks ago and I can't stop reading!  I have five books, that I am trying to knock out for August, but that may be wishful thinking.  

I have been a pretty lousy blogger lately, but all I have been doing is eat, sleeping and reading! :)  No, but seriously, no real house projects.  No, real travel {other than a weekend to Nashville}.  Just living life, but it's been a good month ... It's hard to believe it's almost August and school is starting.  

I will try to do better blogging ...  Any book recommendations out there?

This Week's Recipes ...

Our fourth of July weekend was a lot of fun.  Fireworks on the water.  Eating lunch at the lake.  Playing in the sprinkler.  Hanging out with friends.  It was pretty perfect.  

We don't have too much going on this week, but mom my is coming to visit on Wednesday!  I can't wait!
